Our biltong is made in store using the best quality cuts of silverside beef.
Toby, our butcher, carefully trims the silverside beef, removing any silver skin and other tough inedible membrane of connective tissue. The meat is then seasoned with biltong spice, mixed with vinegar before its hanged to dry in our biltong dryer.
Where do we get our silverside beef from?
Great question, we get our silverside beef from a farm in Northern Queensland in Australia. From experience, the quality of beef has been levels above anything we've sourced from countries such as Argentina, Namibia, United Kingdom and of course other countries in Europe.
If we could import beef from rural South Africa, areas such as the Free State and even Gauteng, then we would. We have friends that live just outside Bloemfontein and we can confirm, they eat some lekker biltong! Geelvet (yellow fat) at a huge scale with some impressive marbling. This is what motivates us into using Australian meat, its very similar, it may not be the cheapest to import, but we'd rather make quality biltong over any old cured piece of silverside beef any day of the week.
How is our biltong shipped?
We send all online orders out sliced in sealed bags and sent with DPD. Anything in store is sliced and served in paper bags unless our customer requests a sealed bag.
